&nbsp;Fats are very large molecules that are made from three fatty acid molecules bonded to a glycerol molecule. A fatty acid is a carboxylic acid with a long open chain and glycerol is composed of three carbons and three OH groups attacthed. Fatty acid chains are hydrophobic as the carbon- hydrogen bonds in the chain are non-polar and so fats are not soluble in water, this is important as its function is mainly as a energy storage as the carbon-hydrogen bonds are energy rich. Fats also serve as insulation in the body to keep the body at a constant temperature, furthermore it surrounds organs to protect them from damage.<br>Fat is one of the three macronutrients essential in our diet. There are two types of fats that we consume, saturated and unsaturated. Saturated fats should be limited in the diet as they form shapes that clump together easily and so can accumulate in arteries and block blood flow cause heart attacks and other serious health conditions
