Carboxymethyl cellulose (CMC) is a cellulose derivative with carboxymethyl groups that have been introduced along the cellulose backbone. The carboxymethyl groups make the molecule soluble in water. It can be used in its sodium salt form. [1]
CMC can be used as a modifier or thickener in food, to stabilise emulsions in products such as ice cream or in gluten free products.
