Fatty acid chains are hydrophobic as the carbon-hydrogen bonds in the chain are non-polar and so fats are not soluble in water, this is important as its function is mainly as a energy storage as the carbon-hydrogen bonds are energy rich. Fats also serve as insulation in the body to keep the body at a constant temperature, furthermore it surrounds organs to protect them from damage.
