Polyphenols can be classified in 5 ways including, flavanoids, phenolic acids, ligans and stilbenes[2]. Research has shown that some polyphenolic compounds can affect epigenetic function by DNA methylation and acetylation of histones, contributing to the anti-cancer action of natural polyphenols.
