Bromelain is a natural enzyme, extracted from the stems of pineapples by biotechnology. It can hydrolyze most soluble protein easily and efficiently, improve the nutritional value of the plants and the animal protein.

Contents

Characteristics

The strict concentration limit of microbe and heavy metal by using the biotechnology and the membrane separation technique, can achieve the pharma and food grade.

Enzyme Activity Definition

Activity is expressed by GDU/g (Gelatin Digesting Units) which is a standard measure of activity for bromelain.

Applications

Pharmaceutical industry

Some medicine with bromelain like throat tablet can diminish inflammation, facilitate digestion and improve immunological competence. So it can be applied in examination, treatment of gynecopathy, glaucoma and inset bitten [1].

Food industry

It can be applied in hydrolyzing protein of plants and animals, so it can be used in the meat tenderizer, wine clarifier, stabilizer of noodle, health foods and soy sauce brewing etc. It can also improve the nutritional value [2].

Uses

The suitable reaction condition is 40--45℃ and pH 6.0-6.8,and the optimum temperature and pH will be changed by the sort and concentration of the substrate.

Safety

If uptaking the enriched enzyme powder or droplet, it may cause allergic.

Long-term touch has stimulation to the skin, eyes and mucous membrane tissue.
